OUR STORY
In her 20s, Michele Kirkland experienced years of severe illness, often misdiagnosed and misunderstood. At one point, she weighed just 67 pounds and was left searching for answers. Finally, more than 25 years ago, she was diagnosed with Celiac Disease, an autoimmune condition where eating gluten damages the small intestine.
At that time, gluten-free products were scarce, flavorless, and unsafe. Michele had to create everything from scratch — a challenge that eventually became her passion. After 18 years in sales, she decided to follow her calling and began baking professionally in 2024.
What started as a cottage bakery quickly grew into Southern Delights by Michele, Abilene’s only 100% dedicated gluten-free bakery. From soft cinnamon rolls to indulgent cheesecake delights, every item is handcrafted in a certified gluten-free kitchen, giving peace of mind to those who need it most.
Michele’s mission is clear:
Celiac disease isn’t a life sentence. Everyone deserves food that’s safe, joyful, and delicious.
She now serves the Abilene community from her South 14th Street location — with plans to expand to Dyess Air Force Base — continuing her mission of changing lives through safe, gluten-free baking.
